Ingredients:
250 g of surimi crumbs 750 g of tomatoes 1 green pepper 100 g of celery 100 g of cucumber 1 lime 1 carrot 1 bunch of spring onions 3 sprigs of coriander 50 g of parsley 30 cl of olive oil 2 cloves of garlic 250 g of single cream 1 star fruit salt, pepper
Making:
Cut half of the pepper into dices. Peel the carrot, wash it, wipe it and cut it into dices. In a pan, melt these vegetables on low heat without browning them with a little of olive oil. Drain on some absorbent paper. Peel and wash all the remaining vegetables, as well as the garlic and the onions. Slice them thinly. Chisel the herbs. Gather everything into a salad bowl. Spray with olive oil. Salt and pepper. Mix and marinade for 2 hours in the cool, then blend the whole. Taste and rectify the seasoning if necessary. Whip up the crème fraiche into some whipped cream. Salt, pepper and perfume it with some lime juice. Put in the cool. Before serving, fill in three-quarters of six big glasses or cups with the gazpacho. Coat with cream, add a tablespoon of surimi and sprinkle above the vegetables drained on some absorbent paper. Decorate every glass with a branch of celery and a branch of star fruit.
