Ingredients:
4 eggs 50 g of flour 175 g of half-shelled walnuts 6 tablespoons of brown sugar (75 g) 100 g of butter + 20 g for the mould 1 sachet of vanilla sugar few drops of vanilla extract 2 egg whites 1 pinch of salt 1 tablespoon of rum or nut liqueur half-shelled walnuts and icing sugar to decorate
Making:
Chop the walnuts, not too thinly. In a terrine, mix the whole eggs and the brown sugar. Incorporate the flour and the vanilla sugar. Melt the butter and add it to the mixture as well as the chopped nuts, the vanilla extract , the salt and the rum (or nut liqueur). Whip the egg whites until they are stiff, incorporate them delicately into the preparation. Pour the mixture in one buttered deep-sandwich pan. Cook in warm oven (Gas 6) for 25 mn. When the cake is cold, turn out of the tin. Decorate with some half-shelled walnuts and sprinkle with icing sugar. Serve with some custard.
