Ingredients:
250 g of shortcrust 3 bananas, very long 125 g of grated coconut 30 cl of milk 3 eggs 60 g of caster sugar 15 g of flour 15 g of corn flour 1 teaspoon of cinnamon 40 g of butter 1/2 lemon
Making:
Bring the milk to the boil with the cinnamon. In a terrine, whip the egg yolks and sugar. Incorporate the flour and the corn flour, then dilute with the boiling milk. Put it again in the casserole and cook until thickening without stopping mixing. Out of the heat, mix with the grated coconut. Preheat the oven th. 6 (180°C). Peel the bananas. Cut them into slices. Sprinkle with lemon. Brown them in the frying pan with some butter for around 3 minutes on each side. Fill in the pastry base with the cream. Display the slices of bananas. Cook for 30 mn in the oven at th. 6 (180°C). Cool down, then turn out of the tin.
