Ingredients:
4 avocados 200 g of prawns, shelled 1 teaspoon of mustard 1 egg yolk oil salt, pepper lemon juice 1 bunch of coriander
Making:
Cover 4 individual square moulds with clingfilm and let the paper exceed the high of the moulds. Make a mayonnaise, add some drops of lemon juice and the chiselled coriander. Mix well. Peel and cut the avocados into strips, lengthwise. Dispose at the bottom one layer of avocado, then some mayonnaise and the prawns. Alternate the layers until you reach the top of the moulds. End with a layer of avocado. Fold over the edges of the clingfilm on top of the avocado, tamp down lightly. Keep in the refrigerator. Turn it out just before serving.
