Ingredients:
1,5 kg of green asparagus 1/2 bunch of chervil 400 g of potatoes 30 cl of double cream 30 g of butter salt, pepper
Making:
Wash the asparagus. Cut the tips at 4 cm. Cut the remaining into slices and remove the ends. Cook the tips 5 minutes into some salted water and refresh them. Pull the leaves of the chervil, put aside and keep the stems. Peel the potatoes, rince them and cut them into pieces. Put the potatoes into a pan, cover with water and salt. Cook until they lose consistancy. Add the slices of asparagus. Cook for 10 minutes and add the stemps of chervil. When boiling, switch off the heat. Mix the soup. Filter it and pour it into a pan. Add the cream and heat. Salt, pepper if necessary. Heat the tips of asparagus into a frying pan with some butter. Salt, pepper. Serve the soup decorated with the tips of asparagus and chervil leaves. Pepper.
