Ingredients:
8 to 10 lasagnes sheets 2 medium eggplants 3 courgettes 3 tomatoes 1 can of tomato purée 3 cloves of garlic 1 large onion 200 g of grated Emmenthal cheese 30 g of butter 2 tablespoons of flour Milk Dehydrated basil Salt, pepper, grated nutmeg
Making:
Cut the eggplants and the courgettes into pieces with their skin. Brown them separately in two saucepans with some olive oil for around 30 minutes. Salt and pepper the whole. Meanwhile, prepare the tomato sauce : brown the onion and the chopped garlic with some oil. When the onion becomes transparent, add the tomatoes cut into small pieces as well as the tomato purée. Add a little sugar (1 teaspoon), salt and pepper. Add some basil to perfume. Simmer for 15 minutes. Prepare a white sauce with the butter, flour and milk. Salt, pepper and add some nutmeg. To assemble the whole, firstly put one layer of lasagne, one layer of eggplant, of courgette and some tomato sauce. Then, add another layer of lasagne and add the vegetables as quoted before. Finish with one layer of tomato sauce. Pour over the white sauce and sprinkle with grated cheese. Bake for 30 minutes and serve very hot with a green salad for example.
