Ingredients:
Tomato sauce : 1 can of peeled tomatoes (400 g) 1 fresh tomato 2 cloves of garlic dried tomatoes (75g) salt, pepper
Garnish : 200 g of minced cultivated mushrooms, in can 150 g of grated emmenthal cheese 1 red pepper 1 green pepper 1 small courgette
Pizza dough : 450 g of flour 1 sachet of baking powder lukewarm water olive oil (1 tablespoon) salt
Making:
Prepare the tomato sauce. Heat up slowly the peeled tomatoes into a large pan. Add the thinly minced garlic. Blend together the fresh tomato with the dried ones, and add them to the pan. Salt and pepper. Simmer over a low heat (for 45 minutes) until complete evaporation of the water. Meanwhile, prepare the pizza dough. Display the flour into a bowl. Dig a well in there. Put the baking powder in there previously mixed with 3 tablespoons of lukewarm water. Add the olive oil and the salt. Mix with a spatula. Then, add little by little the lukewarm water and knead the dough with your hand until you obtain a non-stick homogeneous dough. Let rest for around 20 minutes. Prepare the garnish : cut the green pepper in strips, the red pepper in cubes and the courgette in slices. Spread the dough on the baking tray (with aluminium foil). Display the tomato sauce on top. Then add half of the green and red pepper, the mushrooms, the rest of green and red peppers, the courgette and, lastly, the cheese. Bake in a previously heated oven (180°C) for around 20 minutes. Eat with a green salad.
