Ingredients:
2 tablespoons of olive oil 225 g of tender leaf spinach, washed 25 g raisins 25 g pine nuts salt and freshly ground black pepper 2 eggs, beaten 50 g Parmesan cheese, grated
Making:
Heat the oil in a frying pan, add the spinach and stir-fry for 2-3 minutes or until just wilted. Heat the grill. Add the raisins and pine nuts, season with a little salt and pepper then spread the mixture over the base of the frying pan so that it covers the base in an even layer. Season the beaten eggs then pour them into the pan, moving the spinach so that they run right down to the bottom. Cook gently for a few minutes, until the base of the omelette is set and lightly browned. Sprinkle the Parmesan cheese evenly over the omelette, then put the frying pan under the grill and leave for a minute or two to set and brown the top. Serve at once, cut in half or in thick wedges.
