Cod cooked in tinfoil in the Italian style

Length:
15 minutes of cooking

Ingredients:
1 large courgette
2 tomatoes
4 steaks of cod (150 g each)
4 fillets of anchovies in olive oil
2 branches of basil or parsley
Salt, pepper
4 tablespoons of olive oil


Making:
Preheat the oven at 210°C (th. 7). Wash the courgette, wipe and cut it into thin slices. Wash the tomatoes and cut them into slices as well.
Cut 4 large square into the aluminium foil. Display the courgettes on each square. Put one piece of cod on top.
Put one fillet of anchovy on the cod. Recover with the tomatoes and some basil or parsley. Salt and pepper.
Sprinkle with one tablespoons of olive oil. Close the tinfoils. Bake for around 15 minutes.
Serve hot.
