Ingredients:
1 tail of a cod of 1,2 kg with the skin 6 carrots 6 leeks 6 turnips 250 g of celery turnip 2 branches of celery 1 bunch of mixed herbs 1 lemon Cooking salt, grains of pepper
For the sauce :
6 tablespoons of olive oil 1 bunch of basil 1 garlic clove
Making:
On the eve, wash and dry the cod into some absorbent paper. Put it in a dish, onto some cooking salt. Recover with salt as well. Put it in the fridge for at least 12 hours. The D-day, rinse out the fish and dry it. Cut into thick slices. Peel the carrots and mince them. Cut the roots of the leeks and 2/3 of the green part. Rinse out and attach them together with some cooking string. Peel the turnips and celery turnip. Cut them into pieces. Mince also the branches of the celery. Bring 1,5 liter of water to the boil. Put in it the vegetables, the mixed herbs and around 10 grains of pepper. Cook for 25 minutes. Meanwhile, cut the lemon peel into thin strips. Blanch it 2 minutes into some boiling water. Cool down and drain. For the sauce : pour the olive oil into a bowl. Add the crushed garlic clove. Warm the whole for 10 minutes in a bain-marie, then add the chiselled basil. Cook the slices of cod for 5 minutes into a steam pot. Drain the vegetables. Display them into a dish with the pieces of fish. Sprinkle with the lemon peel. Serve immediately with the sauce.
