Ingredients:
2 tablespoons of extra virgin olive oil 1 leek 1-2 carrots 1-2 firm cooking potatoes 1 kohlrabi 2 spring onions with green, finely sliced ½ celery 150 g of macaronis 100 ml white wine 1 ½ vegetable stock Salt, pepper
Making:
Clean the vegetables (peel if needed), cut into sticks, strips or slices. Lightly braise all the vegetables including potatoes in olive oil. Add the white wine and the vegetable stock. Bring to the boil, cook for 20 to 30 minutes over a low heat. After 15 minutes, add the macaronis. Salt and pepper. Serve the vegetable soup, sprinkled with herbs.
