Ingredients:
1 large eggplant 120 g of flour 2 eggs 300 ml of milk some fresh parsley salt, pepper vegetable oil
Making:
Wash the eggplant and slice it thinly with its skin. Salt and let it sweat for around 1 hour. Prepare the fritter batter : mix together the flour and the eggs, then add slowly the milk until obtaining a smooth and liquid batter. Salt, pepper and add some parsley. Heat some oil into a frying pan. Steep the slices in the batter, then cook it over a low heat in the pan until golden (around 2 minutes on each side). Eat hot.
