Ingredients:
6 big apples 60 g of currants and sultanas all mixed 30 g of pine kernel (nut) 60 g of brown sugar 2 tablespoons of amber rum 1/2 lemon 30 g of soft butter 1/2 teaspoon of ground cinnamon
Making:
Preheat the oven gas 4 (180°C). Put the grapes and 1 tablespoon of rum in a bowl, add half of the brown sugar, the nuts, the cinnamon and the butter. Mix and put aside. Peel the apples. Rub them with the lemon cut in half. Then, by means of a corer, dig the centre of it. Put the apples in an ovenproof flat dish which can just contain them. Fill the centre of every apple with the mixture of grapes. Spread over the top of every apple the brown sugar and the rum that remain. Bake for 35 to 40 minutes (the apples become then soft and are slightly browned). Spray two or three times the apples during the cooking with the juice which they will have produced. Serve them warm or tepid as they are. You can also accompany them with double cream.
You can replace the nuts by grounded walnut halves (30g) which you will incorporate in the mixture.
