Ingredients:
6 herring fillets in vegetal oil 1 kg potatoeas 6 onions 30 cl liquid cream 50 g butter 2 tablespoons of minced parsley 1 tomato 1 tablespoon of breadcrumbs salt, pepper
Making:
Peel and slice thinly the onions. Brown them for 5 minutes in a high-sided frying pan with 30 g of butter. Salt, pepper. Cover. Pursue the cooking 10 minutes on very low heat. Mop the herring fillets with some absorbing paper. Cut them then in regular pieces. Preheat the oven gas 4 (180 °). Peel the potatoes. Wash them. Wipe them carefully and cut them in rather fine slices. Butter a gratin dish. Garnish it with onions. Add the pieces of herrings. Recover with potatoes. Salt, pepper slightly. Spray with 15 cl of cream. Put in the oven. Let cook during 30 minutes. Then take out the dish from the oven. Add 15 cl of the remaining cream. Decorate by displaying the slices of tomato on top of the gratin. Sprinkle with breadcrumbs. Lower the heat on gas 5 (150 °C). Put again in the oven. Pursue the cooking for approximately 45 minutes. Leave the dish in the oven switched off for 15 minutes and serve immediately.
