Ingredients:
800 g potatoes 3 tomatoes 2 eggs 12 fillets of anchovy (in oil) 20 cl of single cream 25 g of butter 1 tablespoon of minced parsley 10 sprigs of chives salt, pepper
Making:
Cook the potatoes with the skin for 20 minutes in some salty boiling water. Hard boil the eggs for 10 minutes. Peel them and cut them in slices. Rinse out the fillets of anchovy. Mop them and cut them in 2 parts lengthwise. Mix the cream with the chopped parsley and the chiselled chive. Salt, pepper. Cut the tomatoes. Preheat the oven gas 6 (210 °C). Drain the potatoes. Peel them when still warm. Cut them in slices. Put them in a buttered flatdish by inserting them with tomatoes cut in slices, hard-boiled eggs and anchovies. Spray with some cream. Put it in the oven for 30 minutes.
