Courgettes au gratin with soft white cheese

Ingredients:
4 to 5 courgettes (around 800 g)
4 cloves of garlic
600 g of soft white cheese, 0% fat content
3 plain eggs
2 egg whites
1 pinch of nutmeg in powder
2 tablespoons of breadcrumbs
1 tablespoon of olive oil
Salt, pepper


Making:
Wash and wipe the courgettes, and cut them into slices. Brown them into a sauce pan with some olive oil until “al dente”. Drain and put aside.
Meanwhile, beat up the soft white cheese, the whole eggs, egg whites, salt, pepper, nutmeg and crushed garlic into a salad bowl.
Put the courgettes into a gratin dish. Pour above the egg preparation. Sprinkle with some breadcrumbs, and put under the oven grill for 15 minutes.
