Ingredients:
500 g of pumpkin 4 eggs 230 g of sugar 300 g of flour + 20 g for the mould 250 g of butter + 20 g for the mould 20 g of baking powder
Making:
Peel the pumpkin, remove the seeds and the strands. Then, cut the flesh into small cubes. Put the cubes into a saucepan with 20 g of butter. Water at pumpkin heigth and cook for 30 minutes over a medium heat, stiring from time to time. When the pumpkin is cooked, mix the preparation into a purée. Let it cool down. Into a salad bowl, beat the 4 eggs with the sugar until the mixture gets sparkling. Add 150 g of pumpkin purée, baking powder and the sieved flour. Stir delicately with a wooden spoon, until the dough gets smooth. Let it rest at ambiant temperature for 1 hour. Preheat the oven at th. 6/7 (200°C). Melt the rest of the butter (230g) over a low heat, and add it to the madeleines dough. Stir well. Butter the madeleines baking dish. Flour it and garnish with the dough at 2/3 height. Bake for 7 to 8 minutes : the madelines must be rosen and brown. Repeat the processing until exhaution of the madeleines dough.
