Ingredients:
4 slices of monkfish, 200 g each 1 onion 2 cloves of garlic 2 tomatoes 1 tablespoon of capers 16 small black olives 15 cl of dry white wine 1 tablespoon of lemon juice 1 bunch of basil 2 tablespoons of olive oil salt, pepper
Making:
Preheat the oven th. 7 (210°C). Scald, peel, deseed the tomatoes and cut it into dices. Slice the onion and chop the garlic. Wash the slices of monkfish, wipe it, salt and pepper. Fry quickly the fish into the oil into a large fryingpan for 2 minutes on each side, then display it onto an ovenproof dish. Into the very same fryingpan, melt the onion and garlic for 2 minutes over a low heat. Add the tomatoes, capers, half of the basil and the olives, washed. Simmer for 2 minutes. Salt, pepper, pour the wine and lemon juice. Bring the whole to the boil and pour it onto the slices of monkfish. Bake for 15 minutes. Decorate the dish with some basil leaves and serve hot.
