Ingredients:
100 g of shortbread biscuits 40 g of melted butter 750 g of fresh cheese like Philadelphia type 150 g of sugar 2 tablespoons of flour ½ lemon zest 1 teaspoon of vanilla extract 3 eggs + 2 egg yolks 125 g of double cream Greaseproof paper
Making:
Cut into the greaseproof paper two strips of 8 cm large and put it inside the dish by sticking them with some butter . Preheat the oven at 180°C (th. 6). Crush the biscuits, add the melted butter, display the mixture in the bottom of the dish. Bake for 10 to 15 minutes. Increase the temperature of the oven at 200°C (th. 7). Whisk the cheese for 30 secondes with a blender or a hand whisk. Then, add the ingredients, one by one, while whisking briefly in between : sugar, flour, zest, vanilla then the eggs one by one, and egg yolks. End with the double cream that you will whisk a little bit. Pour the preparation into the dish and bake. After 15 minutes, lower the temperature to 100°C and bake for 1 hour. Switch off the oven and let the cheesecake inside for another 1 hour, the door a little open. Remove from the oven and let it cool down completely before turning it out and put it in the fridge. Wait 12 hours before serving it.
