Papaya gratin

Length:
20 minutes of cooking
30 minutes of baking

Ingredients:
1 large papaya, ripe
2 eggs
2 egg yolks
75 g of vanilla sugar
5 cl of orange blossom water
One pinch of cinnamon


Making:
Peel the papaya and cut the pulp into strips. Display into an oven dish.
Into a saucepan, mix together the eggs, egg yolks, sugar and orange blossom water. Place it into a double-boiler and stir constantly with a whisk, until obtaining a creamy preparation (around 15 minutes).
Pour the preparation onto the papaya strips, sprinkle with cinnamon and bake for 10 minutes at 240°C (th. 8). Serve hot.
