Ingredients:
700 g of tomatoes clusters 100 g of tomatoes concentré 1 red pepper 6 fresh basil leaves 2 stalks of thyme 150 g of caster sugar 1 dl of water 1 teaspoon of celery salt 1 pinch of saffron
Making:
Wash the tomatoes. Wash and cut the pepper, remove the seeds and white strands. Cut it into strips. Put the tomatoes into a large saucepan with thick bottom. Sprinkle with sugar and cover with water. Cook the whole over a low heat. Let it melt for 20 minutes and then add the celery salt. Stir correctly and add the thyme and basil. After 5 minutes, add the pepper strips. Cook for 20 minutes. After while, add the tomato concentré and saffron. Stir delicately and cook the 15 minutes remaining by stirring every 2 minutes with a wooden spoon. Pour the boiling jam into one or two sterilized jars bearing high heat and close it.
