Ingredients:
100 g of farmhouse bread
1 tablespoon of olive oil
2 large chopped onions
3 cloves of garlic, crushed
2 kg of peeled and roughly minced tomatoes
2 l of vegetable stock
2 tablespoons of tomatoes
1 teaspoon of sugar
¼ glass of fresh basil, roughly minced



Making:
Display the slices of bread onto a baking tray and cook for around 10 into the hot oven. Bread must be crunchy.
Into a saucepan, heat the oil and melt the onion and garlic. Add the tomatoes and cook 10 minutes while stirring from time to time.
Break the bread into large pieces into the saucepan. Add the stock, tomatoes purée and sugar. Simmer for 15 minutes without a lid. Stir from time to time to reduce the pieces of bread. Before serving, add the basil. You can accompany that soup with some extra-virgin olive oil.
