Ingredients:
5 large onions cut into thin slices 2 tablespoons of olive oil 60 g of butter 3 teaspoons of thyme leaves 4 cloves of garlic, crushed 40g of black olives deseed and minced 225 g of flour 60 g of butter, additional 2 tablespoons of grated parmesan cheese 125 g of soft white cheese 1 egg 2 tablespoons of lemon juice 150 g of goat cheese
Making:
Put the slices of onion into a bowl and recover with boiling water. Let it rest for 15 minutes, and drain. Heat the oil and butter into a saucepan. Add the onion, and brown for 20 minutes over a low heat, stirring from time to time, until tender and golden. Add the thyme, garlic and olives. Mix and cook for another 10 minutes over a low heat. Let cool down at ambient temperature. Grease lightly a pie mould of 23 cm diameter. Mix the flour, butter, parmesan and half of the soft white cheese. Add the egg and lemon juice until the pastry is firm. Roll out the pastry and cover the bottom of the mould. Cut the edges. Recover the bottom with greaseproof paper and garnish with dry beans or rice. Bake for 10 minutes over a low heat. Remove the paper and beans, and bake for another 10 minutes, until the pastry is golden. Let it cool down. Mix the rest of soft white cheese and goat cheese. Spread that mixture on the bottom of the pie and recover it with the onion preparation. Bake for 30 minutes over a low heat, until the top is firm. Serve onto ambient temperature.
