Ingredients:
250 g of camembert 150 g of double cream 4 eggs, egg yolks and whites separated 4 tablespoons of rape seed oil
Garnish : 200 g of Chanterelles, washed 1 large onion, cut into dices 1 tablespoon of chopped parsley Salt, pepper, nutmeg
4 tablespoons of butter, for cooking
Making:
After removing the crust, crush the camembert with a fork. Mix it with the double cream and add the egg yolks. Whisk the egg whites until stiff and add it to the cheese preparation. Cook with a lid the mushrooms with the onion into hot oil. Remove it and keep hot. For 4 omelettes : display each time 1 tablespoon of butter into a non-stick frying pan and pour each time ¼ of the egg preparation. Cover and cook for around 5 minutes, until the eggs are cooked. Display the mushrooms preparation onto the omelettes. Serve the omelettes garnished with, for example, parsley.
