Ingredients:
30 cl of coconut milk, unsweet
20 cl of single cream
10 cl of milk
½ vanilla pod
60 g of grated coconut
3 eggs + 3 egg yolks
100 g of sugar
1 lemon to decorate


Making:
Switch on the oven th. 4/5 (125°C). Pour some water into the dripping-pan of the oven for the double boiler.
Heat the coconut milk, milk and crème until simmering. Add the seeds of vanilla pod and put aside.
Sprinkle the grated coconut into a frying pan (without grease) and put onto a high heat while stirring until lightly golden. Whisk the eggs and egg yolks with sugar, add half of the grated coconut and pour the hot milk while stirring.
Display the preparation into 6 ramekins and bake for 45 minutes into the double-boiler. Let it cool down and put in the fridge.
To serve, sprinkle some grated coconut onto the cream and decorate with lemon slices.
