Ingredients:
1,5 kg of potatoes 500 g of onions 8 tablespoons of olive oil 4 cloves of garlic 1 bunch of parsley 750 g of mushrooms
For the dressing: 2 tablespoons of balsamic vinegar 2 tablespoons of dry tomatoes purée, into can 10 cl of olive oil salt, pepper
Making:
Peel and cut the potatoes into thin slices. Peel, chop the onions and brown for 5 minutes into a fryingpan with 3 tablespoons of olive oil. Peel the garlic and mince it, as well as the parsley. Clean the mushrooms, wash quickly under water and cut into thin strips. Into an oiled terrine, display half of the potatoes, salt and pepper. Sprinkle half of the garlic and parsley minced, then half of the mushrooms. Put then half of the onions, the remaining of mushrooms, garlic and parsley and finish with a layer of potatoes. Salt and pepper. Sprinkle with the remaining of olive oil. Close the terrine and cook for 2 hours in oven at 160°C (th. 5-6). Mix the vinegar and tomato purée, and pour the olive oil slowly while stirring. Salt and pepper. Serve the pâté, hot or lukewarm, with the dressing.
