Ingredients:
3 shallots 1 white of leek 1 apple 50 g of butter, slightly-salted 1 liter of whole milk 3 handfuls of sorrel 3 eggs salt, pepper
Making:
Peel the shallots and leek, and mince it. Peel the apple and cut it into small dices. Melt the butter into a saucepan and brown the shallots, leek and apple in there, over a low heat, while stirring. Pour the milk and simmer for 35 minutes without a lid. At the end of cooking, add the sorrel and break 3 whole eggs above the soup. Wait 3 minutes, salt and pepper. Serve and stir before tasting.
