Ingredients:
3 potatoes 500 g of tomatoes 1 aubergines 2 courgettes 2 cloves of garlic olive oil, thyme salt, pepper
Making:
Peel the potatoes and cook them into some water for 15 minutes. Rub a flatdish with the garlic and oil it with some olive oil. Cut in slices the cooked potatoes. Cut the tomatoes and the courgettes in small strips, lengthwise. Slice thinly the aubergine. Arrange the vegetables in the flatdish, the inside turned upwards, so that the juice does not flows. Salt, pepper. Sprinkle with thyme. Spray with olive oil. Bake for 40 minutes at 150 °C (gas 2) until the vegetables are "candied". Serve warm, tepid or cold.
