Stuffed courgettes with tofu

Ingredients:
125 g of tofu
2 courgettes
1 egg
2 cloves of garlic
1 onion
1 tablespoon of frozen basil or 12 fresh leaves
250 g of mozarella cheese
1 tablespoon of olive oil
salt, pepper

Making:
Preheat the oven at 220°C.
Steam the courgettes for 15 minutes until tender. Meanwhile, peel and chop the onion and garlic, brown it slowly into a frying pan with 1 tablespoon of olive oil.
Crush the tofu with a fork, into a plate. Put it into the frying pan with the herbs. Salt and pepper. Cook for 5 minutes.
Core the courgettes. Add the flesh to the preparation into the pan. Cook for another 5 minutes. Out of the fire, add the beaten egg. Put the preparation into the courgettes.
Display slices of mozarelle cheese on top and put onto an ovenproof dish. Bake for 20 minutes.
