Ingredients:
80 g of split almonds 4 fillets of ling 3 tablespoons of oil salt, pepper 10 cl of crème fraîche cayenne pepper 1 lemon flour
Making:
Brown slightly the split almonds into a non-stick frying pan. Dust the fillets of julienne with some flour and brown in the oil, 4 minutes on each side. Salt and pepper. Arrange the fillets on a warm flatdish, placed at the entrance of the oven. Throw away the oil used for the cooking, replace it with the crème fraiche. Make it thicken and color by stirring. Add some salt, some Cayenne pepper (very little, to taste) and the lemon juice. Coat the fish with this sauce and sprinkle with split almonds. Serve with spinach.
