Aubergines with cream

Ingredients:
4 aubergines
150 g of crème fraîche
1 egg
2 garlic cloves
4 bunches of parsley
paprika pepper
20 cl of oil
pepper, salt


Making:
Peel the aubergines and cut them in slices of 0,5 cm thick. Sprinkle some salt on them, and place them in a colander. Cover with a plate. Leave to sweat.
Mop the slices of aubergines and remove the salt with a kitchen tissue.
Beat the egg into a bowl.
Heat the oil into a large pan.
Put both sides of the aubergines into the beaten egg and fry into the hot oil.
Remove the brown slices and put them on some kitchen paper. Keep them into the warm oven.
When you proceed to the last frying, add the minced garlic and parsley. Be careful not to burn them.
Display the aubergines into a warm dish, pepper and mix with the garlic and the parsley.
Pour over the cream and sprinkle with some paprika pepper.
Serve immediately.
