Ingredients:
400 g of courgettes 300 g of short macaronis 1 onion 50 g of butter 1 large tablespoon of flour 1/2 liter of milk 100 g of crème fraîche 100 g of grated Parmesan cheese 3 tablespoons of breadcrumbs 4 tablespoons of olive oil nutmeg, salt, pepper
Making:
Bring to the boil a large quantity of water into a stewpot. As soon as the water boils, plunge the macaronis in there, stir and cook 10 to 15 minutes according to the indications on the package. Prepare a béchamel sauce : melt the butter. Pour the flour there and mix. Cook over a slow heat for 1 minute. Add the milk. Salt, pepper and flavor with grated nutmeg. Simmer on low heat for 10 minutes. Mix the crème fraîche into the béchamel then, out of the heat, add 2 tablespoons of Parmesan cheese. Mix. Meanwhile, brush the courgettes under cold water and discard the ends . Cut the courgettes into slices, peel the onion and slice it thinly. Warm up the oil in a wide frying pan and put in it the chopped onion to brown slowly. As soon as it becomes translucent, add the slices of courgettes. Simmer for 10 minutes while frying them. During this time, preheat the oven gas 6 (210 °C). Drain the pastas as soon as they are cooked but still very firm. Mix them with the béchamel sauce. Butter a flatdish and alternate the macaronis, the béchamel sauce, the courgettes and the Parmesan cheese. End with the macaronis sprinkled by Parmesan cheese and cover with breadcrumbs. Cover with pieces of butter. Bake for 15 to 20 minutes. Serve hot.
