Ingredients:
1/2 can of peas 1/4 can of asparagus 4 spring onions 6 eggs 80 g of grated Emmenthal cheese 4 tablespoons of olive oil salt, pepper
Making:
Brown for 3 to 4 minutes the peeled and chopped onions in the frying pan with 2 tablespoons of olive oil. Beat the eggs with a fork. Add 1 tablespoon of oil, the peas, the drained asparagus and cut in fragments ; then the grated cheese. Salt, pepper. Pour the mixture into the frying pan and stir quickly so that the eggs aren't cooked. Pour the whole mixture into an oiled mould. End the cooking for 20 minutes in the preheated oven on th. 5. Turn out the tin and serve warm, tepid or cold.
Advice : add, if necessary, some fine herbs - coriander, mint or parsley.
